Growing up, I was fortunate to experience hiking and hunting with my father and fishing with my uncle. Summers were spent on Long Island visiting farms, harvesting vegetables, gathering fresh eggs, and cooking with family around campfires.
These experiences instilled in me a deep appreciation for our planet and the environment. The simple joy of a sun-warmed tomato sprinkled with sugar from the backyard, teaching a friend how to catch and cook blue crabs when I was only twelve, and my aunt always having the perfect avocado ready for my visits—these are the moments that shaped my culinary passion.
From Deli Kid to Sandwich Artisan
A Lifelong Love Affair with Sandwiches
Back in the 80s, my parents purchased a deli from an Italian old-timer who stayed with the business after selling it. It was from him that I learned the art of making sandwiches. He taught me the importance of selecting quality ingredients, preparing them properly, and, perhaps even more importantly, maintaining a clean kitchen. I even learned the hard way, slicing the tip of my finger off multiple times while breaking down the meat slicer daily.
We sourced our meats from a local butcher shop, where I learned about the farms and how the animals were raised. We regularly ordered top round beef and huge whole turkeys to slow-roast for our own homemade roast beef and turkey breast. From this experience, my very first creation was born: the Holy Nebula Sandwich (which, back then, included a layer of crispy turkey skin).
Fast forward 40 years, and my love for sandwiches has only grown. At Mood'Wiches, we've revived the art of sandwich making. We roast our meats in-house, source pasture-raised beef from upstate NY and free-range poultry from Amish Country, and use organic or low-pesticide produce. Forget processed meats and artificial sauces – we focus on crafting exceptional sandwiches with real, wholesome ingredients. No elaborate recipes or fancy sauces, just a simple, delicious sandwich reminiscent of childhood, made healthier with real food, unprocessed ingredients.
